I think I remember a little something about a plan I had once. A plan that I was going to put some of my Pinterest time to good use. I planned on posting some of the recipes that I tried at least once a week. Well... I had good intentions, right?
So, let's go move ahead and enjoy this one I am going to share with you today.
It's the 8 can taco soup recipe. If you follow me on Instagram, you might of seen a picture I shared one night. This is one of the easiest recipes out there, and cheap too. But does it taste good? Yes! The whole family gives it a thumbs up!
The recipe comes from High Heels and Grills, and literally all the recipe calls for is 8 cans and one packet of taco seasoning.

Here's what you need:

  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 (15 oz.) can pinto beans, drained and rinsed
  • 1 (14.5 oz.) can petite diced tomatoes, drained
  • 1 (15.25 oz.) can sweet corn, drained
  • 1 (12.5 oz.) can white chicken breast, drained
  • 1 (10.75 oz.) can cream of chicken soup
  • 1 (10 oz.) can green enchilada sauce
  • 1 (14 oz.) can chicken broth
  • 1 packet taco seasoning




  • If you count the cans above, you will actually see I am missing one. I forgot the green enchilada sauce for the photo.
    So, on those busy nights when kids are rushing home from a practice/lesson or rushing off to one, and dinner needs to be made pronto, this is a sure thing. You can add some shredded cheese, sour cream, or crushed tortilla chips to it as well, and maybe if you have a little more time, you can whip up some cornbread muffins. Yummy!
